Ingredients

  • 3–4 lb Whole Harvest Meats Chuck Roast

  • 1 tbsp salt and pepper

  • 2 tbsp olive oil or tallow

  • 1 large onion, chopped

  • 4 carrots, peeled and cut into chunks

  • 4 potatoes, quartered

  • 2 cups beef broth

  • 2 sprigs fresh rosemary and thyme

Preparation

1. Preheat oven to 300Β°F.

2. Season the chuck roast with salt and pepper. Heat oil/tallow in a large skillet and sear the roast on all sides until golden brown.

3. Transfer the roast to a Dutch oven. Add onions, carrots, and potatoes. Pour in beef broth and add herbs.

4. Cover and roast for 3–4 hours until tender.

5. Serve and enjoy a meal that warms your heart and soul.
