Ingredients
3–4 lb Whole Harvest Meats Chuck Roast
1 tbsp salt and pepper
2 tbsp olive oil or tallow
1 large onion, chopped
4 carrots, peeled and cut into chunks
4 potatoes, quartered
2 cups beef broth
2 sprigs fresh rosemary and thyme
Preparation
1. Preheat oven to 300°F.
2. Season the chuck roast with salt and pepper. Heat oil/tallow in a large skillet and sear the roast on all sides until golden brown.
3. Transfer the roast to a Dutch oven. Add onions, carrots, and potatoes. Pour in beef broth and add herbs.
